Best Apple Pie & Crust Recipe

I recently made an apple pie and found a great recipe online.  I made both the crust (which was extremely easy as well) and the apple pie (which was phenominal) completely from scratch.  If you’re looking for a quick recipe, this isn’t for you.  However, if you have time on your hands and want an amazing apple pie, this pie won’t let you down.

First Step: The Crust

This crust is extremely flaky and delicious.  I really enjoyed it, and I think you will, too.  Its also extremely easy to make and not too messy.  All you need is butter, flour, and salt, which most people (even college students) have in their (or their neighbor’s) houses (or dorm rooms).

The dough has to sit in the fridge for 4 hours.  I let mine sit overnight and made the pie the next night, so plan on making this dough ahead of time.  This recipe is for a 9″ pie plate and I recommend making two batches of dough.  You will use one  batch of dough for the crust and the other for the lattice crust on top of the pie.  This recipe was originated here.

This is the recipe for one crust; if you plan on using this for an apple pie with a lattice crust, make two separate batches.

INGREDIENTS

  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup butter, chilled and diced
  • 1/4 cup ice water
  • DIRECTIONS

    In a large bowl, you want to combine the flour and the salt.  It won’t be too hard, there is barely any salt in this recipe.  You want to cut in the butter.  The smaller you cut the butter, the easier it will be to mix.  Stir in the water slowly, one tablespoon at a time, until you can form the mixture into a ball.

    Spread out some plastic wrap and wrap the ball in plastic.  Set the ball on a small plate and place in your fridge for four+ hours.  You can leave the dough overnight.

    When you are ready to make the apple pie, roll out your dough with a rolling pin to fit a 9 inch pie plate.  Place your crust in the pie plate and make sure the consistancy is equal on all sides and at the bottom.  You might want the crust to jut out a little from the sides if you’re following this recipe to the end, since you will be attaching the lattice crust in a few steps.

    This pie was slightly frustrating for me at first.  I was pretty convinced the pie would turn out horribly (my roommate felt the same way), but instead it was the best apple pie I’ve ever had.  Just follow the recipe and you’ll be glad you did.  When you’ve got your final product, please leave a comment below so others can be convinced as well.  The original recipe can be found here.  The recipe below has been changed slighly; I’ve found the changes to be very delicious!

    INGREDIENTS

    • 1/2 cup unsalted butter
    • 3 tablespoons all-purpose flour
    • 1/2 cup white sugar
    • 1/2 cup packed brown sugar
    • 1/4 cup water
    • 6 Granny Smith apples – peeled, cored and sliced
    • 2 Golden Delicious apples – peeled, cored, and sliced into 1″ by 1″ pieces
    • 1 tablespoon cinnamon

    DIRECTIONS

    First you will want to cut up and core your apples.  I cut mine into smaller 1″ by 1″ chunks or smaller.  Mix the Granny Smith apples and the Golden Delicious apples together.  You can use 8 granny smith apples if you do not have or want to purchase golden delicious apples.  I’ve found that this combination is amazing.  Place your apple pieces into your pie crust making a slight mound in the middle.

    Sprinkle the tablespoon on cinnamon equally over your mound of apples.  Roll out your second batch of dough.  Use a pizza cutter to cut the dough into strips and make a lattice crust.  Leave about three centimeters between the strips on the pie so your topping with be able to drizzle down and make your pie amazing.  The crust doesn’t have to be perfect, so don’t get to frustrated with making everything perfectly symmetrical.  Once your lattice crust is done, your pie should more or less look like the picture to the right.

    Preheat your oven to 425 degrees (220 Celsius) before you start your mixture that will go over your pie.  Now, go melt your butter in a medium saucepan.  Do not start this until your lattice crust is done!  Stir in your flour to make a paste.  Add your sugar, water, and brown sugar (If you don’t have brown sugar, substitute it with white sugar and add about a tablespoon of cinnamon.  This will make your pie look completely different, but it will still turn out tasting amazing).  Bring this to a boil, then reduce heat and let simmer for 4-5 minutes.

    Take your mixture and slowly pour all over your lattice crust.  It might seem goopy or thick, but it will all work out in the end.  Pour this slowly over your entire crust.  You can use a brush to spread it equally.

    Place your pie in the oven at 425 degrees (220 Celsius) for 15 minutes.  After 15 minutes, reduce the heat to 350 degrees (175 Celsius) for 35-40 minutes.  Remove your pie from the oven and let sit until it cools, then enjoy!
